Watermelon and tomato together?! Yes! These two fruits have very different flavors but shine together with the same salty, spicy treatment (you remember from elementary school that tomato is a fruit right?!). Topped with a generous sprinkle of tangy feta cheese, it’s summertime perfection.
5 cups watermelon, chopped into small cubes
2 cups tomatoes, chopped into small cubes
1 cup cucumber, chopped into small cubes
¼ cup red onion, grated
1 jalapeno, grated**
1/4 cup fresh cilantro, chopped
2 tablespoons fresh mint, chopped
2 teaspoons fresh lime juice
1 teaspoon kosher salt
1 teaspoon sugar
¼ cup extra virgin olive oil
½ cup feta cheese, crumbled
Combine all ingredients except feta cheese in a large bowl and mix. Scoop out 2 cups or so of this mixture and set aside.
Pour remaining mixture into food processor or blender and pulse to combine. Add the olive oil while you do this. You don’t want to completely puree the mixture, just get it to a chunky soupy consistency. Transfer to a large bowl and stir the reserved mixture back in.
Taste and adjust seasonings until you feel happy.
Spoon into bowls and lavishly sprinkle generous amounts of feta on top.
This would go well as a side dish to brighten up the smoky flavor of grilled meat or barbecue.
*Garlic, onion and hot peppers are very pungent in their raw form, so I like to use the small holes on a good ol’ cheese grater to grate them. This allows those powerful ingredients to meld into the dish instead of knocking you over when you crunch into a big piece of raw garlic or onion.
**Jalapenos can vary greatly in their spiciness. Taste a smidgen first and then make a decision about how much to use. You can always add more in the tasting phase if desired.
